We bought the land originally in 2001 as a weekend retreat for the family, with no idea of an olive grove in mind. We have always loved good olive oil but knew nothing about growing olives. At a meeting of the local olive association we were told of an olive nursery nearby. After careful consultation with the nursery owner, the olive varieties - Frantoio, Correggiola, Licino - were chosen for oil, and Manzanilla and UC13A6 - were chosen as pollinators. Deciding on the harvest date is the most challenging time of the year - we walk a tightrope in May between the olives ripening and the onset of frosts, which can severely damage the crop. Our long standing passion for exquisite olive oil has meant that we have always cultivated our trees to obtain the best fruit possible; we use only organic products and harvest entirely by hand. Extra virgin olive oil is the natural juices cold-pressed from fresh olives and has the lowest acidity of any olive oil; extra virgin olive oil is the highest grade of olive oil available, promotes a multitude of health benefits, and is the only olive oil worth using. Can you cook with extra virgin olive oil? Absolutely, high quality extra virgin olive oil will only start to smoke at very high heats over 210 degrees Celsius. Since this is higher than the heat required for deep-frying, extra virgin olive oil is perfect for all home cooking and deep-frying. If your oil ever does smoke- simply pour it out, slightly lower the heat and start over with fresh oil.
